Most soft bread and buns popular in China are for sweet teeth. But the savoury group never lose audience. These savoury vegan scallion bread is based on my milk bread recipe. It is slightly sweet, tender and savoury all at the same time. If you’ve had any oriental (i.e. Chinese or Japanese) bread, you’ll find that they are sweeter and more delicate and tender in texture than your normal bread. They taste like a soft hamburger bun or brioche!
Unfortunately most of these breads are made with eggs or butter so I can’t have them. And since I don’t want to deprive myself of these comfort foods, I made my own vegan-friendly version of the scallion bread. I only changed the amount of sugar and salt. The method is quite easy and quick. There is no need to make the roux. But the bread comes out super delicious with a light and fluffy texture.
These soft and aromatic scallion bread are super easy to make and taste delicious. This makes a perfect accompaniments for a bowl of soup or salad. They on my bucket list for quite sometime and I finally made it few weeks back as I had a bunch of spring onions in the fridge, which was perfect. Scallions can always be amazing when heat with flour, just think of the famous Chinese scallion pancakes. After baking, the chopped scallions become crunchy, which is quite interesting when eating.
