Banana Blender Waffles

Are you a waffle or pancake person? I’m more of a waffle type of girl, especially when they’re easy to make, vegan and good for you! These super fluffy vegan banana blender waffles are crispy on the outside and light and soft on the inside, you would never be able to tell that they are eggless and dairy-free! While I would put these waffles in the “indulge” category, they’re definitely a healthy indulgence. With no added sugar, plenty of fibre from the rolled oats, and tons of banana flavour from two whole bananas, I don’t feel one ounce of guilt for having these as a weekday treat or a slow weekend breakfast — and you shouldn’t either.

I like the idea of banana bread that can be made–start to finish–in under 10 minutes. Even better: making the idea a reality! On addition, how about banana bread where every serving has the crispy, toasty edges of my favourite parts of the loaf (the end pieces). If all of the above appeals to you as well, dust off your waffle maker and make a batch of these vegan banana waffles asap! Using just seven ingredients, these easy whole-foods, plant-based waffles are the perfect vegan meal-prep breakfast. I like to make a whole bunch of them before work on Monday and pack em’ up to enjoy all week long. Like most banana recipes, this one was borne out of the need to use up some spotty bananas. I love how they make the house smell as they cook. They are lightly spiced with cinnamon and vanilla, so their scent is the ultimate in homey! Crispy on the outside and soft in the middle, these waffles are truly scrumptious.
