Hi friends! Today I was craving something carby, high in protein and really filling. These smoky vegan BBQ lentil stuffed sweet potatoes are a vegan and gluten-free main with a one-two punch of plant protein and fiber. It is also perfect for a pre-workout meal. Lentils are the superfood. They are packed with protein and fiber, low in fat and cook in about 25 minutes. The lentils are cooked with tomato sauce, maple syrup, mustard, sriracha and liquid smoke to create that particular barbecue flavour.
The baked sweet potatoes are super soft on the inside, topped with spicy-sweet-smoky green lentils. I love this mixture because the smoky flavour is the perfect counter to the sweetness of the spuds. Lastly, these spuds get topped with a tahini sauce to add cooling creaminess and cut through the heat of the lentil mixture. It results in a combination of flavours and texture that I just can’t get enough. Sometimes, all you want is a filling, hearty, yet healthy meal that is easy to make without sacrificing flavour. This is exactly what this recipe is about.

One serving averages about 9 grams of protein and a whopping 8 grams of dietary fiber to help keep you full longer.
