Every night, no matter how late, I’ll always pack my lunch. However, not only do I need to pack my lunch, but also breakfast and snack food because I'm straight up hungry all day long. These vegan berry coconut granola bars are one of my favourite healthy granola bars because they’re packed with fiber-rich oats, delicious berries, and boast healthy fats from nuts and peanut butter.
I love the idea of a fruit-filled, portable granola bar. I don’t love the reality of ready-to-eat cereal bars from the grocery store, including the organic, all-natural, “healthy” options. The ingredients for this recipe are simple and let the berries shine. These bars are lightly sweet, but definitely not the kind of sweet that leaves you feeling icky afterwards. Does anyone else feel that way after eating something too sweet? Also, they're so good. Probably because the binding ingredients are peanut butter and coconut oil. Did I mention these bars can gluten-free? Awesome right?
These bars will seem soft and underdone. Not to worry! Throw them in the fridge, let them cool entirely and these healthy berry coconut granola bars will be exactly what you want them to be: a soft, chewy bar. It maintains it shape and isn't rock solid aka breaks your teeth when you try to bite into it. Wiiiiiiin!
