Does it ever happen to you that you’re craving cookies but what you really want is the cookie dough? Luckily, one of my favourite parts of plant-based vegan baking is that all of the cookie dough is edible. It certainly makes recipe testing easier because I can actually taste the dough before tasting the end goal. If we ever make it to the baked cookie finale haha. So…what if I just went ahead and created a cookie-dough recipe just for eating? Can you believe vegan cookie dough could be healthy and full of protein and nutrients? Cookie dough is typically a not-so-healthy treat, but honestly, I could eat cookie dough all the time, so I wanted to make a healthy version so I didn’t feel so bad! It is now a healthy guilty pleasure!
This vegan black bean chocolate cookie dough breakfast bowl is actually not like cookie dough in the sense that they have no flour, grains and no refined sugar. But they explode with deep, rich, chocolate flavour and is like dough from the land of cookies in the sense that they taste just like it. This recipe is packed with protein, fibre, healthy fats, and antioxidants! It is the perfect transitional breakfast from the weekday to the weekend. All healthy, but with a bit of dark chocolate sassiness to usher you straight into the fun of the weekend! (And a bit of much-deserved indulgence).
