Who's up for some sushi? I know that white sushi rice is the traditional version but I have been seeing sushi rolls made with brown rice so why not black rice? This instagram-worthy vegan black rice sushi is easy to make and packs well for a brown bag lunch that may spur office lunch-envy. Are you a fan of black rice? Because I am. It’s the richer-tasting, anthocyanin-packed, classier cousin of the other rice varieties, and loaded with antioxidants and delicious. ‘Nough said. It tastes very much like brown rice but with the added bonus of lots of antioxidants. I also just love the look of it. Once it’s cooked it gets this lovely almost purple colour. So pretty.
To be honest, I never acquired a taste for sushi until I was in my teens. I didn’t like the fishy taste of the seaweed and I especially didn’t like idea of raw fish, which I like even less now. Yeah, you won’t find any raw fish recipes here on the blog but the good news is that you can still make some delicious varieties of sushi with just some good old vegetables.
