We had a non-veganised version of this bisque for dinner a few weeks ago, and it seriously was my favourite part of the meal. Yes, even over the carbs. Simple ingredients, simple preparation, big flavour. I was in love and knew I needed to make a vegan version for the blog asap. Apparently the weather wizard has decided it’s officially December in Singapore because dem temps are coooold right now. And while my chapped hands and lips aren’t too happy, my tummy is doing a happy dance because soup season is upon us.
This bisque is so delicious it will have you licking the bowl clean (I might be speaking from personal experience, here!). And don’t worry – just because it’s simple and “detoxifying” doesn’t mean it’s not satisfying. Your tummy will be full, but not in a way where you feel as if you need a nap. You will probably feel even more energised and alive due to all of the nutrient-rich goodness found in this butternut squash carrot bisque.
This bisque, it’s so good and cosy, I chose to have a bowl of it over the millions of baked goods I made over the weekend in preparation for the holiday festivities here on the blog for lunch yesterday. Bisque > dessert, almost never! But today? Bisque > dessert.
I love cooking, but I know you’ll agree with me when I say that there are some evenings when I would just rather not. Do you feel the same some evenings? Those are the evenings this 🥣 vegan bisque🥣 is perfect. Even though there still a few more months to go until october, I have been more and more into the classic fall flavours. Pumpkin, apple spice, cranberry, cinnamon, and of course, butternut squash.
This bisque is the epitome of fall: orange for the changing of the leaves; it’s lovely and warm for the cool weather outside; this is the time of the year where butternut squash comes out to shine; and the spices and velvety texture in this soup just beckon for a cozy latte and blanket afterwards. And it is super healthy because it’s basically just carrots and butternut squash. Oh and vegan.
