Carrot Sourdough Loaf

It's back to school (for most, for some?), and having a plan for speedy and healthy lunches is imperative. If you're like me, easy lunches are the best lunches. Here I’m taking the humble sandwich to the next level with this vegan carrot sourdough loaf. When you think of sourdough bread, you probably envision a crusty, chewy, artisan-style loaf. But this bread, made with levain (an overnight starter based on sourdough starter) is a richly flavoured, soft-textured sandwich loaf, perfect for all of your favourite sandwich fillings and for breakfast toast as well, especially soft, fluffy and moist.



This loaf stays fresh quite well for several days. It could be the moisture from the carrot. It has a very mild sourness to me though some of my family members couldn't really taste the sourness. I did prefer the robust flavor and texture of the sourdough loaf. Plus, we baking geeks know how much fun it is to work with sourdough. Although this sourdough loaf recipe takes a good 8-12 hours from start to finish, the vast majority of the time is hands off.
