Mmmmm! Why does everything always taste better when it’s swimming in cheese? Or maybe it’s just me? Nah. It really does. This 100% plant-based and junk food free cheesy risotto without all that cheese will knock your socks off! Serve it in place of your favourite traditionally non-vegan side this year. Nobody will know it’s vegan!
I love risotto. I know I've said it before and I'll say it again. It may take a little while to make but it’s totally worth it. When I first started making risotto I would literally stand in the kitchen and watch it the entire time it was cooking because i was convinced that I was going to screw it up. But once you get the hang of making it you don’t really have to watch it like a hawk haha!
To tell the truth I really don’t make a risotto very often, but every time I do I think “I have to make more of these”. I love the creaminess and for us it is one of the best ways to eat rice. Now, I’m not going to lie. The original, uber-processed, super classy version of this dish is something I think we, in my family, all hated to love. But how does the vegan version stack up? Amazingly! Seriously, it was delicious, shockingly cheesy, and maybe just as addictive as the original, with one difference: I felt way better after downing a full plate of this version. It’s every bit as tasty, just cleaner.
This cheesy risotto is so freaking delicious that if I were wearing a skirt right now, it would make my skirt fly up. Thankfully I’m not, I’m a pants only kinda gal, skirts or dresses are for weddings or special occasions only. It’s one of those dishes I used to camp out next to, eating spoonful after spoonful. Don’t worry, I always wipe the spoon off on my sleeve before plunging it in for another bite.
Can you tell I’m a joy at family gatherings?! Of course, now I don’t eat cheesy risotto anymore. Or do I??? Who needs anything else when you’ve got a hot bowl of awesome risotto waiting for you?! Definitely not me!
