Chocolate Cherry Overnight Chia Oats

A couple Sunday’s ago I was at my local farmers market and I spotted a few boxes labeled “first of the season cherries”. obviously I had to get some. I didn’t have a recipe in mind when I bought them, I just wanted something local and fresh to eat. Of course later that afternoon I came up with the idea for this vegan chocolate cherry overnight chia oats, but that was after I had already stuffed myself eating half of them. there’s just something about that slightly sweet, slightly tart taste - the inevitable red fingers you get from eating overripe cherries, the enjoyment of coming up with new ways to remove the pit (I prefer doing it while eating the cherry and hoping that my mouth is dexterous enough to prevent choking).

This community of health/wellness/food/whatever you want to call us bloggers is made up of people from all walks of life. We each have our own philosophies on health and what’s considered balance. Adding chocolate to oatmeal is mine. I find the combination of chocolate and cherries absolutely heavenly. Honestly, I can’t think of a more perfect food than chocolate covered cherries. Chocolate is rich in flavanols, which in addition to having antioxidant qualities, have potential influences on vascular health, such as lowering blood pressure, improving blood flow to the brain and heart, and making your blood less susceptible to clots.

These overnight oats are packed with nutrients you need to power through your morning, like healthy omega-3 fatty acids from the chia, fibre from the chia and oats to stabilise blood sugar levels while the oats provide slow-burning energy. The cherries give you antioxidant power that can boost your immune system and prevent free radical damage that leads to chronic disease and aging. I lalso ove adding chia seeds to my breakfasts as they’re packed with omega 3 fatty acids and are a brilliant source of fibre, healthy fats and protein. Not only this, they also contain calcium, manganese, magnesium and phosphorus. They really are nutritional powerhouses!
