Chocolate Coffee Avocado Bundt Cake

Are you looking for a sweet treat without all the guilt? This vegan chocolate coffee avocado cake might just fit the bill. I used avocados to create a rich, velvety chocolate cake. This is an insanely delicious, moist, rich, decadent piece of chocolate cake that just happens to include avocado! And wow. They were out of this world. Who would have guessed – chocolate, coffee and avocado. This was the start of a great new thing. Really, you might know it’s a healthier dessert with avocado in it, but no one else would ever guess!

Has avocado ever looked so tempting? I know this cake sounds crazy, but it works. I love healthy alternatives, but there are certain things I just won’t compromise. The rich, pure, decadent flavour of chocolate is one of them.

I recently struck gold on the avocado deal of a lifetime. with over a dozen of super ripe avocados on hand and plans for more than guacamole, I knew I had to get to busy. I quote myself: baking and cooking with avocados is a great way to cut out butter and oil. It also adds some awesome nutritional content to your sweets & baked goods – giving you an excuse to eat another piece of that dessert 😉 “It’s not because I'm a chocolate fanatic, it’s because I need the 20 vitamins and minerals. It is like my multivitamin”. Sounds legit to me. Yup, it sure does.

I remember the first time I saw someone use an avocado in a cake. I’m glad there wasn’t a camera pointed at me because I’m pretty sure the expression on my face wasn’t pleasant. I’m not one to hide my feelings on my sleeve, particularly when it comes to food. But then I finally tried a cake with avocado in it, and it wasn’t too bad. In fact, it was pretty good. I decided to make my own cake with avocado.

My previous baking attempts with avocado—trying to create a recipe for avocado brownies—were abysmally awful. (And yes, I'm aware those two words mean the same thing. Trust me; the brownies warrant the tautology.They were that bad.) So I cannot tell you how excited I am that this avocado chocolate cake turned out so perfectly!
