Some days I really can run out of inspiration on what to cook for dinners. Last evening, I had one of my uninspired dinner days moment (hmm.. you kinda don’t want me to cook on those days for I can come up with a really funny menu).
I had some pumpkin from the night before and knew that there were some leftover chickpeas which would expire soon. We needed carbs and I thought whipping up a pasta should do the trick except that I wanted to challenge myself and try making a pasta using asian flavours.
A genius idea popped into my head and I decided to put together a pasta sauce using miso paste as a key ingredient. As I started chopping the ingredients and prepping for the pasta dish, I was actually excited on how it would turn out…and tadaaa, this vegan creamy miso and pumpkin chickpea pasta was born!
Who loves miso? I do!! When you love an ingredient like miso so much, you look for ways to incorporate it into literally every meal. This is just one of those ways to bring that delicious flavour into an unconventional meal. This is a dish that beautifully marries local asian flavours with traditional Italian ingredients and methods.
Perfect for after school and you only want to spend very limited time cooking in the kitchen. This miso pasta will be on your plate before uber eats even receive’s your order. Don’t believe? True me! I’ve been eating them so much lately I think I might turn into them one day (as my aunt used to say when I ate the same things daily as a child).
The weather is pretty chilly here, meaning comfort food, chocolates and sweets. And it is not going to change anytime soon. I’m already looking forward snow (in my dreams), holiday movies, and gooey cinnamon buns. Just the idea of staying in, under a cozy blanket with a bowl of this creamy pasta makes me want to be in winter already. This super creamy pasta dish gets nice umami depth from the miso and the sauce is equally balanced with light flavours and the miso really does a great job of creating a creamy delicate sauce and equal punch of flavour. are you drooling now?
