Creamy Tofu Pudding

Who doesn’t love pudding? I can’t think of a single person either. And the only thing better than thick and creamy chocolate pudding is this thick & creamy vegan tofu pudding that also happens to be protein-packed, full of fibre and calcium, and gluten free. This is arguably the easiest pudding you will ever make, and also probably the most delicious.



The secret ingredient is silken tofu which, when blended with cocoa powder and a little sugar, turns into a spoonable, decadent treat with a rich chocolate flavour. Tofu is an excellent low-carb, high-protein food, and is also a great source of calcium and iron. In one cup of tofu, you are getting about 16 grams of protein! Maybe we should call this chocolate tofu pudding a post-workout snack instead? Sometimes, I just need a little chocolate and this dairy-free silken tofu vegan chocolate pudding recipe fills the spot without me having to wear it on my hips.



This only takes only 5 minutes of hands on time. The main item of importance when buying ingredients is to make sure you pick up a soft tofu (not firm)! The soft tofu is what makes for the creamy texture; firm tofu is what you would use when cooking it up for a something like a stir fry. Once you have your soft tofu, all you need is cocoa powder and maple syrup. These are ingredients that are always on hand in our pantry, and we’d guess they’re in yours too! Give them a whiz in a blender for a few minutes. The resulting texture will look just like pudding! The last step in making this tofu pudding is giving it a good chill. After you blend it, you’ll notice the texture is pretty runny. Pour it into glasses or bowls, and pop it into the refrigerator for at least 30 minutes to let it set. After setting, the texture will be much closer to a mousse or pudding.



This is one of those recipes that I’ve been making forever, but I rarely actually make. Why’s that? I can’t have it around. It’s seriously delicious and dangerously addictive. I have to admit, I was skeptical about using tofu in a dessert. Tofu used to kind of scare the crap out of me. I don’t know about you, but when I traditionally think of tofu, I think of rubbery blocks that don’t have a lot of taste, but I was pleasantly surprised when they were added to this pudding. They are pretty much flavourless but it has the perfect consistency to use as a creamy alternative to dairy products.
