Curry Banana Stir-fry

Yet another use for bananas and this time I decided to put them in a curry. Sounds exotic, right? Sometimes my mind goes blank, and I don’t know what to cook for lunch, but I was craving for something sweet yet savoury.


Before you turn your nose on the idea of having banana and curry mixed together, hear me out. I promise that this is one cracker of a vegan curry and is definitely worth trying.



Whether you’re a banana fan or not, trust me when I say that this banana curry is amazing. It is sweet and fragrant rather than spicy. It is made with a creamy coconut sauce with no overwhelming flavours, just a moderately sweet curry base with a tangy undertone. Texturally, it was sublime, with a mix of crunchy, chewy, and soft components.


You can taste the balanced combination of spices separately and all together. It is made a perfect harmony, don't you think so? And when I finally perfected the secret recipe, I nearly started dancing around the table! Can you feel my excitement?!


This curry sauce is a crazy blend of spiced bananas with a curry kick, a little sweet and sour action, with the perfect amount of spice. It is so creamy and thick, just like a savoury pudding that coats everything together. Simply throw the sauce ingredients together into a blender and cook time is only 15 minutes! Say what!!!!! 😱 Definitely perfect after a busy weekday.
