I love it when dinner prep can be done in no time. Win, win, win. This time it involves Chinese eggplants and tofu. The only thing you need to do is chop the eggplants, and minced the garlic and ginger, then let the magic happen in your skillet. This vegan eggplant with minced 'meat' is one of my fav Chinese dish!
Traditional Chinese eggplant with minced pork is done with mostly fried eggplant and just a tiny amount of minced 'meat' for flavor. My meatier version here has plenty of crumbled tofu to turn this wonderful side dish into a complete meal and the star of your dinner table, and the result is just as good.
I love how the eggplant and ‘meat’ is braised in the sweet, spicy, and savoury sauce. I am a big fan of this dish, it’s easy to make and full of flavour. The eggplant is stir-fried in light oil, then braised in a Szechuan sauce mixture until flavourful and tender. This Chinese recipe is much better than Chinese takeout and is a fun recipe to start with if newer to making Asian cuisine!
