Eggplant is one of those foods that can easily be very good or go very wrong. When done right, eggplant has a rich but mild flavour with a soft, creamy texture. This vegan grilled eggplant with peanut sauce is one of my favourite vegetable to barbecue. It is tender in the middle with slightly charred edges and are coated in a delicious peanut sauce which gives it so much flavour.
This side dish has been a staple at my house for as long as I can remember. It’s my mum’s original recipe and is super easy to prepare, and it tastes amazing served warm or cold. Even eggplant-haters love this recipe. I love how the eggplant is almost transformed by grilling it. Its flavour deepens and becomes rich and complex and its texture becomes very luscious and creamy.
This purple fruit (yes it’s actually a fruit, not vegetable!) has many different names: Eggplant (North America), Aubergine (UK), Brinjal (South Africa). Eggplant contains a good amount of vitamins, minerals and fibre, one whole cup of eggplant is only 20 calories! Best of all, they’re low on calories but really high on flavour when seasoned right! The flavour is mild yet earthy and eggplant can be paired with nearly any kind of seasoning, sauce, or even melted cheese! So get that barbecue fired up!
