Kimchi Fried Rice (볶음밥 - Kimchi Bokkeumbap)

Say hello to my new go-to weeknight meal: vegan kimchi fried rice. Soups and stews are great for the colder season and I’m all for it but sometimes I’m just feeling a big ol’ bowl of rice. Kimchi Fried Rice, is a fried rice dish made by stir-frying Kimchi and rice together with some seasonings. It’s a classic Korean comfort food that’s made in households across the country to use up leftover rice and overripe Kimchi.

I’m always looking for different ways to use kimchi, and this kimchi fried rice is another fantastic way to get this tangy and addicting condiment into your meal rotation!

This recipe is meant to be simple, without much fuss, and is perfect for a quick and easy lunch, dinner, or even breakfast! With crispy fried tofu and spicy/sour vegan kimchi, this recipe is super healthy, filling and packed with flavour!

The best thing about this Kimchi fried rice, besides how delicious it is and how fast it comes together, is how good Kimchi is for us! Fermented foods, including delicious Kimchi, increases the good bacteria in our gut, and many believe that the secret to overall good health starts in the gut. The heat and spice kind of gives it a cosy vibe to it and it’s sooo satisfying to eat. Plus, it’s such a great way to use any left over rice and kimchi that might have been sitting in your fridge for just a tad too long.

i think i have fried rice syndrome. i just love the idea of stir frying rice in a hot wok or skillet, with various ingredients mixed in. it’s an Asian comfort food that i enjoy a lot 👅💦 always mouthwatering and appetising. it’s a taste of home, yet you can totally make it your own by throwing in everything you have lingering in the fridge – from leftover rice to the last few carrots, mushrooms and veggies.

This kimchi fried rice isn’t actually fried but it reminds me of takeout. Don’t be intimidated by the fiery red colour of this Kimchi fried rice. It actually isn’t that spicy! This flavour bomb hailing from Korea is sure to satisfy and can be made in under 20 minutes! A delicious healthy weeknight dinner in no time flat!
