I’ve been really loving korean flavours lately, and there was some kimchi in the fridge. Boom. This quick and easy vegan kimchi ramen stew was born. You know when someone says something is spicy, and then you’re like… uhm, yea not at all. This is not one of those times. This is spicy... In the best way possible. It’s not going to burn your face off (it’s a flavourful spicy), but it gives me a runny nose every time… truly spicy food always makes my nose run for some reason.
I’m not sure about you, but when it’s cold, all I want to eat is spicy food. The spicier the better. This dish has a comforting balance between sweet, sour, spicy, and savoury and is one of my favourite cold-weather meals. Imagine this bowl of steaming and piping hot kimchi ramen on a wet, gloomy and cold rainy day. This recipe is based on the flavour profile of kimchi – garlicky, savoury, slightly spicy, sour, and a little bit sweet. It contains a wealth of veggies, mushrooms and tofu. It’s a really warming meal and is just packed with nutrition. It is so delicious you will ask for a second round!
If you love kimchi and if you love ramen or if you’re a fan of flavour-packed fermented foods (like me), then you’re probably always on the lookout for new dishes to try in order to eat more and more of them! Then you’re going to love this vegan kimchi ramen recipe! This recipe is quick and easy to make. It’s ready in just 45 minutes or less! It’s a fuss-free, spicy and tangy comfort food that will help you warm up on the cold, rainy day.
