Kimchi Udon

I’m a huge fan of Korean-inspired dishes. It is a cuisine that’s just so full of flavour! vegan kimchi udon is no different. From the kimchi to the gochujiang, this udon dish is sure to make your taste buds dance. In addition to being jam-packed with flavour, this dish is one that comes with extra coziness attached. My mum and I particularly love these noodles because it’s spicy, savoury, slightly tangy, nutty and addictive. Once you taste it, you can’t help it. It’s inevitable! This is a sweet, nutty and spicy kimchi udon your whole family will love – and it only takes 15 minutes to make from start to finish!


I love to make this meal when I’m craving something that will warm me up. It’s a great hearty dish that’s guaranteed to leave your belly feeling full and content! Have you tried kimchi before? Kimchi is a delicious fermented vegetable native to Korea. It’s incredibly healthy as it’s filled with probiotics, vitamins K and C, folate, and fibre. Udon noodles are tasty, thick-cut noodles typically found in Korea and Japan. The noodles are made from wheat and are usually served with soy sauce. They’re heavier and thicker than ramen noodles, and they’re incredibly delicious! Combine both ingredients together, and we’re left with a kimchi udon noodle dish that is unlike anything you’ve ever had before. With a bit of spicy kick, this vegan dish offers a fine balance of savoury and spicy flavours. Simply addictive!



This recipe is so easy, anyone can make it. It’s the perfect weekend recipe as it only takes a few minutes to stir fry and even less time to eat (since you will be slurping these kimchi noodles with major gusto!). I always keep a tub of kimchi in my fridge for ’emergency’ situations – meaning whenever a dish desperately needs a kick of flavour. It is a quick fix that always seems to hit the spot!
