Lemon Berry Chia Overnight Oatmeal

What’s sunnier than lemons? Lemons are refreshing and have a bold flavour so I figure it could give people a nice kick in the pants in the morning to get their day started. I used to only eat smoothies for breakfast – okay well that’s not totally true, I used to eat a bagel everyday but that was before I became more health conscious. After discovering overnight oats, I became a bit obsessed. These vegan berry chia overnight oatmeal are a refreshing take on breakfast. Tart and sweet, these are perfect for any weather!



I love this mixture of tart lemon with creamy yogurt and sweet berries that create an overnight oats blend that is ready for the day. They are packed with protein, fibre, and healthy fats to start your day strong. You might not think that oats would pair well with the acidity of lemon, but the addition of yogurt keeps them super creamy and delicious. No veg, who dis?! This might be the first overnight oat recipe on the blog to go sans veggies. I know, I know, I thought about sneaking some in the mason jar, but I love the lightness of these oats without the extra bulk.
