Millionnaire Bars

School is over for this year and I deserve some celebratory chocolate for making it through the semester. And today, I’m celebrating with healthy(er) homemade vegan millionaire bars, say whaaaat? Going with the decadent theme here, I decided to go with a date caramel middle layer and it came out so good! Just imagine a chewy crust, super fudgy cashew caramel and a crunchy chocolate coat on top – this is what dreams are made of! I just might have eaten 3 of these beauties for breakfast this morning!



Chocolate . . . on top of caramel . . . on top of shortbread . . . yes please!!! But this layered dessert isn’t just about appearances guys – it also comes together quickly to produce a trifecta of flavours! The super gooey, melty center has almost the same exact texture of caramel minus all the artificial-iiish. Oh and that crack you hear when you bite into that chocolate on top will have you swooning! Oh, and when you cut these pretty little bars , don’t be surprised that the chocolate will kind of have a mind of its own. It is the ultimate act of letting go of control – watching the solid chocolate crack in headstrong directions opposite your knife line. I think it adds to the charm of these perfectly imperfect raw candies, don't you agree?
