I have been on a coconut kick lately. Coconut milk in my smoothies. Coconut yogurt on top of everything. And coconut butter for a midday snack (yes, spoon straight into the jar – no shame). So it was only a matter of time before I fused my favourite new snack with my favourite chocolate! These cups are a match made in heaven It is the best of both worlds, especially if you are a fan of flavours and textures - a delicious mix of dark, rich, and bitter chocolate. The coconut center is smooth, creamy, naturally sweet without being overpowering.
Health food stores and supermarkets are filled with healthy candy cups, but let’s face it- The price tag for a mere two cups cost the same as a jar of gourmet coconut butter or some quality baking chocolate. However, these coconut cups are super delicious and I bet so much healthier than most store-bought coconut bars, are vegan, gluten free, refined sugar-free, delicious and very coconutty. In the low carb world, these little keto, sugar-free treats might also be known as “fat bombs”. Yes, it’s a detestable name but they do serve the excellent and delicious purpose of filling you up with good healthy fats so you don’t find yourself gobbling down the carbs in a moment of weakness.
These vegan no bake coconut cups are the perfect summer treat. Just imagine you are lying on the beach of a tropical island, the sun is shining on your skin, you can see coconut palm trees everywhere and the sound of the waves calms you. You bite into one of these coconut cups, the piece melts in your mouth and your taste buds are about to scream with joy…… Sorry to burst the bubble, as you are probably not lying on the beach right now, but trust me when I say that these coconut cups will taste amazing wherever you are.
