No Bake Cookie Dough Bars

Everyone knows that raw cookie dough is the best part about making cookies. and don't these vegan no bake cookie dough bars look scrumptious? If there is a dessert you need to make right this minute, it is these secretly healthy cookie dough bars! Seriously, they are that good. I have been making these for the last couple months, and literally everyone has loved them, from junk food addicts and omnivores to health-conscious vegans and food snobs (hello, that last one is me). For such a decadent tasting dessert, you’ll be pleasantly surprised to know it is actually healthy! Even though these bars have no flour in the filling at all, they have plenty to sink your teeth into. The medjool dates, maple syrup and the tahini together give the bars that classic cookie dough taste and aroma. And the miniature chocolate chips complete the flavor profile.

Luckily, the cookie dough part is completely eggless, so you can sneak a few spoonfuls while you wait. What remains are thick, soft and chewy bars that taste like real chocolate chip cookie dough, all topped with a layer of smooth chocolate.
