No-Cheese Broccoli Risotto

A classic/traditional Italian risotto is often considered unhealthy because it normally contains a lot of butter and cheese. But it can be made much healthier, nutrient-rich, with less fat, and the addition of vegetables. It’s actually fairly easy to make a healthy risotto which still turns out creamy, and delicious. if you are a fan of risotto and cheese then you will love this dish. Seriously, if I were to pick three words to describe this dish they would be: Creamy. Cheesy. Heaven.



This vegan no-bake broccoli risotto is indulgent, creamy, and cheesy, despite being 100% dairy-free. it requires some love and attention during cooking, but the results are well worth the effort. This plant-based version is not traditional, but is equally delicious and you don’t need any cheese to achieve this creamy texture and full flavour! This is probably the easiest homemade vegan cheese sauce ever! It might change your life, it changed mine, I am not kidding. This might seem odd to Italians but it works beautifully: the starchy rice, the ‘cheesy’ sauce, both are the perfect counterpoint for each other. To tell the truth I don’t really make risotto very often, but every time I do, I think, "I have to make more of these”. I love the creaminess and for me, it is one of the best ways to eat rice.



If you have never tried risotto before you have to give it a try. It’s a simple dish made with arborio rice. This Italian rice is starchy and uses a different cooking method than traditional rice. The result is a bowl of rich and creamy rice that satisfies your dairy craving without any animal products. You can toss in just about any veggie that you like to make endless variations to risotto. This would make the perfect weeknight meal when you need something that’s incredibly satisfying and comforting in a hurry. It would make a delicious entrée or side dish, and it would also work well for dinner parties, as it’s a versatile side dish that complements just about any main.
