Hello, avocado! Did you know that avocados contain almost 20 vitamins and minerals? It also contributes to heart health and may support healthy aging and weight management. It also makes food creamy, nutty, and fatty. The good fats though, which are called monounsaturated fat that reduces levels of bad cholesterol in your blood and lowers your risk of stroke and heart diseases. If that didn’t convince you, they also have quite a bit of protein, very low sugar and are an excellent source of potassium. But my favourite part of all, 1 medium avocado contains 11 grams of fiber, can you believe that? That’s almost half of the daily recommended minimum intake. So I say one avocado a day keeps the doctor away.
Okay, also, if you guys haven’t guessed it by now, my favourite food is pasta. Pasta, pasta, pasta. I could eat it for breakfast, lunch and dinner everyday. I don’t, but I definitively could!! What’s your favourite food? Like if you had to choose just one food in the whole, entire world. Recently, mine might just happen to be this vegan oil-free avocado pesto pasta. Traditional pesto is made with pine nuts, cheese, and plenty of olive oil, making it relatively high in calories. This avocado pesto however is lightened-up, using no added oil, nuts, or cheese, taking the flavours of this simple vegan pesto to a whole ‘nother level!!
Avocados add a silky consistency and cheese-like richness to dairy-free pesto. This avocado pesto pasta is just as creamy, cheese, and delicious as it’s non-vegan variants, but it is both dairy-free and oil-free! How did I do it, you ask? Well, let’s find out… So what's the other secret ingredient to this super green pesto? Spinach! Adding spinach is an easy way to “bulk up” your pesto. Spinach blends in beautifully with pesto and it’s a powerhouse of nutrients. It’s also an inexpensive way to stretch the amount of pesto you have without sacrificing texture or flavour. But spinach doesn’t stop there. I was just reading about this recently and there have been multiple studies that show that spinach helps combat many cancers, helps boost eye health and has strong anti-ageing properties. I can go on and on and talk about the benefits of avocados and spinach, but why bother. All you need to know is that not only is this sauce good for you, it tastes freaking amazing.
I also love the bright green colour of this sauce, it is so pretty. I just love the colour green in my food. I mean look at that silky green sauce… one bite and you will seriously be hooked. It looks healthy. It is healthy. So you feel extra healthy eating it, ya know? Of course if you were to skip the spinach, you might not get that bright green colour, so the spinach definitely helps.
