There’s just something about a perfect portion of noodles, hot and smokey from the wok, that resonates with me on my most basic, primitive level. Like many Thai noodle dishes, this stir fried vegan pad see ew recipe is what I call Thai fast food! If you don’t already know, pad see ew is a stir-fried noodle dish that is commonly eaten in Thailand. The name of the dish translates to "fried soy sauce" and it is very similar to the char kway teow of Malaysia.
Originating in the streets of Thailand, pad see ew is particularly famous for its flavourful sauce which is the perfect balance of savoury, sweet, and slightly tangy notes, further elevated with the caramelisation of the noodles. It’s like pad thai’s cousin, but made with thicker rice noodles and a rich soy flavour. The sauce uses a few quintessential Thai ingredients, and it coats the noodles and tofu in its warm flavour. A cozy and comforting dish, perfect for a quick and easy dinner. It comes together in less than 15 minutes, and is filled with bold Thai flavours! This noodle dish is total comfort food. It’s not spicy, so it’s very approachable and totally family friendly. This recipe calls for simple pantry ingredients to be made in a single pan, which makes it the perfect dish to enjoy on any occasion.
If you’ve ever ordered pad see ew at a Thai eatery, you know that it always comes with a choice of “meat,” For my plant-based version, that can be tofu or a variety other plant-based proteins. I am also using vegan oyster sauce and fermented black bean sauce to mimic those complex umami flavours, and to give the rice noodles the brown gloss that makes this dish so appealing. This version is salty, balanced with a touch of sour and a wonderful chargrilled flavour which you can create easily at home! The chargrilled flavour is achieved because the noodles caramelise in the wok, but you can use a skillet if you do not have a wok.
