Seriously, I can’t remember a day when I didn’t eat peanut butter. I could eat it with anything. Really, try me! These vegan peanut butter strawberry oat bars exceeded my expectations in every way. Full on peanut butter goodness with the surprise of fresh baked strawberries in every bite. Pure deliciousness!



These bars are a healthier fruit dessert made with fresh strawberries, rolled oats and peanut butter. This healthier oatmeal bars recipe is a favourite, because these delicious treats are easy to make. They are the next best thing for a sweet indulge moment during the sunny days ahead. These bars are also perfect for snacks, school lunches, pre/post work out fuel-ups, and breakfasts on the run. They are quick to make, freeze like a dream (I bake them in bulk, freeze individually, then thaw as needed), and will keep you full for hours. Ditch the drive through meals and store-bought bars that add to your budget and have big, scary words listed in the ingredients.



With these oat bars, your taste buds will enjoy a bold balance between the sweetness and tartness of the strawberries tied with a nice crunch from the rolled oats and soft, nutty flavoured body from the peanut butter and oatmeal. The texture of these bars is thick, chewy, and soft in the center, perfect for what you want from a breakfast bar! The peanut butter gives it the buttery flavour, without any butter needed. They remind me of strawberry oat squares!
