Happy World Pasta Day!! To commentate this special day, I decided to channel the flavours of my love pizza into a this vegan pizza pasta bake. If this pizza pasta bake doesn’t scream comfort food, then I don’t know what does.
This recipe is perfect for those who are craving a pizza night in but just don’t have the time to make their own dough (seriously, who has the time for kneading)?! It’s easy, very family and kid friendly and so quick to make! This recipe combines two Italian dishes, pizza and pasta and has all of the typical Italian flavours including tomato, cheese, basil and oregano. Win win, right?!
Also, doesn’t it look exactly like there’s a thick layer of cheese on top of that vegan pasta bake you see before you? This dish makes me so happy. Since creating vegan recipes, I’ve found it hard to recreate a classic pasta bake or lasagna that I feel is truly delicious but this one really hits the spot!
And since it is summer here, I decided to make use of my basil plant and garnish the bake with fresh basil and pesto!
Believe it or not, but this cheesy pizza pasta bake is better than ordering pizza takeout. I mean, just look at it – just like pizza, this fusion dish is absolutely swimming in ooey, gooey “cheese”! But, that’s not the only reason I’m skipping takeout these days. As it turns out, this comforting food is also healthy, so it won’t put a wrinkle in your diet plan.
The result is a very rich, very satisfying vegan pasta bake that will definitely impress some guests if you had to serve it at a dinner party, maybe with a large green salad and some fancy bread and lots of good red wine!
Another thing that makes this really a good choice for a dinner party is that you can make it in advance. So you can get it all ready in the dish, cover it in foil and put it in the fridge and then 20 minutes before you need to serve it, put it in the oven to bake!
