I love curry, it’s one of the most satisfying meals in my opinion. Veggie curry served with rice, potatoes or flatbread is my favourite dinner lately and it keeps me full for a long time. I often eat this veggie curry with rice but it tastes also amazing with potatoes or flatbread. You can even serve it with regular bread. This vegetable curry contains healthy carbs, protein, and fat and tastes absolutely amazing. You can also sprinkle some fresh coriander on top since coriander is an incredible herb which goes so well with curry.
It is currently 30°C in Singapore which is 86°F for any American’s currently reading, so quite frankly, it’s far too warm to be writing about a hot curry I cooked the other night, but I'm doing it for you, out of the kindness of my heart, because you need to know this recipe, and have it for every night of the week. Last week my local grocery store had loads of pineapples in stock, and as I had a sweet potato ready to be used at home and had been craving a good curry, I decided to whip up this curry that night. Believe me, there isn’t anything more comforting watching a great movie with a warming bowl of this curry in your hands.
I have a bit of a weakness for homemade curry. Well, to be fair, I should really say that I have a huge weakness for homemade curry! It’s fairly quick to whip up, it’s healthier than take-out, and it tends to fill me up nicely. Plus, once you have a base recipe down, it’s endlessly customisable with different veggies and protein. And this sweet and savoury roasted sweet potato & pineapple curry with pineapple? It’s the latest addition to my weeknight curry lineup.
This curry is so comforting and warming. Now if you’re a bit skeptical about using pineapple in a savoury dish, just trust me on this one, the pineapple makes this dish! This versatile fruit is delicious eaten fresh and it is equally delicious in sweet or savoury dishes. In southeast Asia, it is often used in curries like this, which helps give the perfect balance of sweet and salty and savoury, and it’s just so darn good!
So now we know what kind of food they serve in heaven. It’s for surely gotta be curry, for surely for sure. There just cannot be anything else. I’m not just talking about just any old curry -> I’m talking about the kind of curry that hits that perfect spot between silky-creaminess and fire-breathing flavor all in one sweeping, saucy bite. For example, just off the top of my head: Curry that can be made in about 20 minutes and that just makes your heart sing for joy when you remember that you have at least 3 servings of it left in the fridge and you are about to win big at leftovers lunch.
Oh my gosh. There is not one single thing I don’t love about this type of food. Curries have got me pretty excited around these parts. The past week I've been testing it and then shooting it so I’ve been eating a lot of curry and it’s been totally divine! To say it’s delicious would be a serious understatement. It’s the kind of meal where you just can’t stop exclaiming about how good it is to everyone around you!
If you wanna try this roasted sweet potato & pineapple curry, you know it’s not only satisfying and delicious. It’s made with pineapple, which is high in vitamins. Think about C, B6, beta-carotin, thiamin, folate, minerals like potassium, cooper, manganese, calcium, or magnesium.
Also it’s a immune booster. By stimulating the activity from white blood cells, which reduces illness and boosts the system at the same time. Good for bones: thanks to it is high amount of manganese which strengthens, grows, and repairs bones, and reduces inflammation of joint and muscles.
You can expect that this curry is incredibly flavourful, creamy, easy, absolutely customisable, has just the right punch here and there. It’s amazingly satisfying, made for gatherings and company, made in one pot, addictive, mouthwatering in and out, you will thinking about my words if you ever try this. A keeper and a game changer, if you love curry. I have a big fondness for curry and this time is no exception. Try it and you will see these will get a big soft spot in your heart. There is so much fun in the kitchen, while it’s simmering it will smell incredible. So your kitchen will smell every time absolutely amazing.
