There is something very wintry, very comforting about Shepherd’s Pie. Hearty vegetables in a brothy sauce topped with fluffy mashed potatoes, all baked to bubbly perfectly.
Today was one of those perfect chilly days – fairytale-like breeze, warm herbal tea, and a cozy feeling. And there’s nothing more cozy than a warming dish, so I crowned this beautiful day with a comforting recipe full of flavours – the shepherd’s pie, in its delicious vegan version, with sweet potatoes and lentils. It made the day!
Traditional shepherd's pie contains ground beef but i'm shocked at how "meaty" this turned out 😱!! Makes me believe that even those who normally snub their noses at meatless meals would enjoy it.
I had a batch of sweet potatoes, so I decided to replace some of the mashed potatoes with the sweet ones, while the meaty texture was to come from my favourite legume – lentils. I like to serve this shepherd's pie with lots of vegetables. The combination of these veggies and the shepherd’s pie is just delicious and so nutritious. It is a meal that is absolutely brimming with vitamins, minerals and protein.
What is there not to love about tender, saucy, flavourful lentils topped with light and fluffy mashed potato?
