Summer has just gone and the whether is dropping tempestuously. I have to say goodbye to easy summer salads and start my new journey into hot noodles soups and while I’d prefer to have maybe a few more minutes to veg-out in front of the TV, being busy sure beats the alternative! This delicious and spicy vegan Sichuan style Chinese noodle recipe was created on one of those crazy days when the only thing that’ll make the swirling madness seem all better is a bowl of noodles.
Did you know that spicy veggie Sichuan noodles is a popular Indo-Chinese street food in India and relished by everyone? Thin noodles combined with veggies are tossed in hot and fiery Sichuan sauce making it a delicious and flavourful vegan meal! Smoky, spicy and with a punch of umami, these Sichuan noodles will keep you coming back for more. Plus, the entire recipe only requires 10 ingredients and is ready in 15 minutes! Sometimes a girl just needs a bowl of noodles! Oh boy – this spring is shaping up to be a busy one.
Let me clarify something. I don’t pretend to know how to make every dish China has to offer. It is a big country! But when I make up my mind to learn how to make a dish (usually one I personally love), I’m big on research. I study the origins of the dish, compare recipes, look at Chinese cooking websites, and test recipes several times before the final result is approved. With that being said, this is my inspired version. Since I don’t have an authentic version to compare it to, this might not match your favourite restaurant’s version. But, what I can promise is that this recipe is surprisingly easy, intense in flavour, and 100% delicious.
Eating Sichuan food is really the best gastronomic experience ever. Imagine that fiery hot taste and having tingly lips when you eat it. Trust me guys, first bite – and I was hooked! A reaction happens when slurping noodles that seems to erase the insanity of a busy day. Feel free to use any type of noodle you like in this easy to make (and totally vegan!) Sichuan noodle recipe. I used rice noodles in my recipe – but the spicy, umami and crunchy veggie mixture will totally go well with ramen noodles or even spaghetti. Delish!
