Spicy Peanut Noodles

I’ve always loved spicy food. Let me rephrase that, I’ve always constantly craved spicy food. I just love that kick. And when a recipe combines both noodles and peanut butter – you know it’s going to be a good one! This vegan spicy peanut noodles is best for those nights when you’re craving extra saucy, slightly spicy peanut noodles, but don’t want to leave your house…or wait for take out.



There really is no exact science to what goes in dishes like this. I really just go with my gut and the end result is always delicious. But that’s what’s so great about dishes like this, you can customise them to what your taste buds want. If you’ve got peanut butter and a handful of basic Asian pantry essentials, then you can probably make these spicy peanut noodles right now. The great thing about this dish is that there are no rules about what veggies and/or proteins go into it! Being quarantined at home, I made this exact meal just rummaging through the last bits of ingredients we had in the fridge and pantry. Lo and behold, it was the best thing I’d eaten in the entire time we’d been stuck at home!



These spicy peanut noodles have so much flavor! It’s spicy, savoury with a hint of sweetness and quite possibly my favourite take-out inspired meals I am sharing. Serve each bowl with an addicting chili oil spooned over top. These quick and healthy peanut noodles can be made and ready in under 30 minutes.
