Pasta, vegan sausage, spicy, creamy…what is not to like about all of that in one meal? Thick slices of vegan sausage with a spicy tomato sauce all tossed together with any kind of pasta you like. Even better, this comes together in just 30 minutes. That is what I call the ultimate weeknight dinner! When the weather gets chilly, I love to make comfort food, and this spicy sausage pasta is what it’s all about. Quick, fuss-free and when you get the flavour combinations right…they can be packed full of flavour. This pasta has so much going for it. It’s rich, filling and a quick midweek dinner. The type of meal I cook all the time after a stressful day in at home!
Although we all love comfort food, it usually comes with a price. In fact, most of us avoid comfort foods, because they are generally high in calories and full of fat. On the contrary, eating spicy sausage pasta is anything but delicious and low fat. This recipe in particular is a super crowd pleaser. Creamy pasta mixed together with vegan sausage…what’s not to like? I actually tested this one back in June last year, but held onto it for a few months until the weather cooled down a bit; it felt like a late recipe. I can’t even tell you how rich and wonderful this pasta is- and, it’s vegan!
I lovingly blame my obsession with carbs on my parents (thanks, mom and dad). Growing up we had no shortage of bread, noodles, and pizza on our dinner table. To this day, these are the foods that bring me comfort and joy. I made my own tomato sauce, however you can use store-bought ones too. For protein you can use your favourite vegan sausage or swap it out for roasted broccoli or fresh peas. Both of these veggies are great sources of plant-based protein.
