Starbucks Inspired Pumpkin Cream Cheese Muffins

These vegan starbucks cream cheese pumpkin muffin recipe are my rebellion against the weather gods who insist we’re still in the middle of a hot and humid summer. 30 degree weather or not, these muffins are worth making! Super moist from the pumpkin puree and seasoned to perfection with the flavours of cinnamon, nutmeg, and ginger, you don’t want to miss out on this year’s first pumpkin recipe. So grab you whisks and mixing bowls and whip up a batch of these vegan pumpkin muffins today.


The other day I was at starbucks getting an iced coffee and I peeped into their baked goods case and was super tempted to buy one of their pumpkin cream cheese muffins. But I stopped myself because lord knows what in the world is in those muffins. Needless to say I’m 100% glad that I opted out of that muffin and decided to create my own! Plus I honestly feel like mine taste way better without the need for all those extra animal and processed ingredients).


The one thing I always hear people tell me is that they’re not fans of vegan baked goods because they tend to be dry or flavourless. After trying this recipe your view on vegan baked goods will dramatically change. These muffins are moist and extremely flavourful. The cream cheese helps the spices in the muffin not become overwhelming, and the pepitas (pumpkin seeds) add a nice texture.



Take these muffins to your next brunch or breakfast party, or just make them for yourself to have on hand for a easy breakfast on the go. If you make this recipe into 12 muffins they’re only about 150 cals each (makes a yummy breakfast treat)!


This vegan starbucks cream cheese pumpkin muffin recipe makes soft and delicious treats with a warming mix of pumpkin pie spices and creamy cheesecake-like centres. Sugared pumpkin seeds and crumb topping give these muffins a tasty crunch as well! I loved them so much! The whole muffin reminded me of pumpkin cheesecake.


I mean seriously, what is not to love? These pumpkin cream cheese muffins are pumpkin perfection! They are great for breakfast, brunch, snack time, dessert, a midnight snack, Halloween, Thanksgiving…really any time! And if you can eat only one, can you please share your super powers with me? I couldn’t resist. I won’t tell you how many I ate.


Enjoy them warm and fresh from the oven. You can also store these in the fridge for a few days but I like to freeze my leftovers. They thaw wonderfully. Just heat in the microwave by cooking on high for 15 seconds at a time until they are just warm to the touch.
