Sun-Dried Tomato Pesto Pasta

Have you ever had one of those moments where a recipe idea formulates in your head and then it just snowballs? It is like the more you think about it, the more it all sounds right and then you realise that it’s a worth a shot and there’s nothing to lose.



This sun-dried tomato pesto pasta was spawned from one of those moments. How I was going to make it, I didn’t know. iI was in my room one afternoon trying to figure out dinner and I started going through my refrigerator in my head. I started to put ingredients together and viola dinner was planned.



The smell of pasta with sun dried tomatoes reminds me of summer!! We are talking next-level pasta here, friends. It is getting to be that time of year when dinners are meant to be eaten on patios and lunches should be consumed in parks and on beaches. Bring on summer and good eating on the patio!



Pesto is my answer to just about everything. If I’ve got scraps of any herb lying around the house, chances are it’s going in a pesto. Once you make pesto a few times, you’ll realise that you don’t even need a recipe. A little bit of green, some garlic and aromatics, salt/pepper and a healthy drizzle of quality oil. Toss with just about anything.



If you’re a lover of simple pasta, you’re going to love this recipe. It is big on flavour and short on time and vegan! Plus, from start to finish it requires about 20 minutes and just 6 ingredients! In my world, it doesn’t get much better than that.



Let me tell you something, I don’t really cook with sun-dried tomatoes. Yeah – it is true. I remember one pasta salad that omma used to buy from the market when I was younger and I would pick out all the sun-dried tomatoes and eat around them. It is not that I didn’t like them, but yeah, I guess I didn’t like them….



But now I’m quite sure that sun-dried tomatoes are one of the absolute best flavours in existence. The tangy, savoury flavour is like someone took the essence of summer and made it into a concentrate. Tastebud party! Sun-dried tomatoes create a jammy, concentrated flavour base for this pesto in a pasta dish that's intense in the best possible way.



What I did not think for the life of me is that it would taste like heaven!!!!! If heaven has a taste it is this dish, lol I mean really. It was as if I never cooked or even ate for that matter. I went on facebook, twitter and every other social media I could find just to tell the world how amazing this was. Silly what can i say. When it is that good, people need to know about it.




This pasta is me paying tribute to those magical tomato flavour bombs and turning them into something you can use to drown pasta (or drink straight from the blender, whatever – it is your prerogative and I’m not here to judge).



Shouldn’t all meals be this easy!? A quick pulse of ingredients in the food processer tossed with hot pasta and voila - dinner is served.



I seriously could not get enough of this pasta. Too bad I made just enough for 2 of my friends and I so we were both very sad when we slurped up our last noodle.



Now that I’ve praised this dish enough, you should go make this for someone you love because, well, why wouldn’t you want to share the deliciousness? But I won’t judge you if you want to make it and keep it all for yourself!
