Thai Peanut Curry Noodles

I feel like we should talk about my noodle problem! It’s kind of an elephant-in-the-room, bull-in-a-china-shop, peanut-sauce-all-over-my-face-and-why-didn’t-anyone-tell-me situation. So, fairly obvious.


To sum it up: if you try to come in-between me and my noodles, i’ll probably bite you. But proof that if you would like to keep your epidermis intact, you should probably keep a five foot radius when there’s a noodle bowl in front of me. i just cannot be held responsible for the defensive arm flailing that will almost certainly occur 😉


So now you’re probably thinking okay, but….what is so dang great about these vegan thai peanut curry noodles?! Sweet salty spicy curried melt in your mouth, what’s there not to like?



I’m a super fan of thai food. I love how you can get the perfect combination of sweet, sour, savoury and spicy all in one perfect mouthful. I’m especially fond of curries. They’re super quick to make and you have total liberty to throw whatever you want into them.


In Thailand, curries are traditionally used in meat, tofu and vegetable dishes. But let me tell you, curry on noodles…it’s a total game changer!


That is so much more than alright in my spicy noodle loving book. Does it win your heart over even more if I tell you it takes less than 30 minutes to make? It’s the truth. So just, here, take some chopsticks.
