Since October is National Pizza Month, I thought it would be a great idea to share this recipe for your enjoyment! As far as I’m concerned, any night is a good night for pizza, and whipping one up at home is cheaper than ordering out every time a craving hits!
We eat takeout pizza all the time (too often, to be honest) but it’s been practically forever since I’ve made one at home. I don’t know why I don’t make them myself more often – they’re so easy and are ready to eat in just about the same time that it would take delivery to get to the house anyway. Plus it’s so much fun to come up with different topping ideas!
This vegan tomato and cheese pizza is a good transitional recipe if you are new to eating vegan. It uses cheese, so it’s not an unprocessed meal but it’s completely vegan and a better option than buying a boxed pizza.
Hopefully you’re not on one of those avoid-all-the-carbs diets because really, that’s just not necessary. Pizza is necessary. We need carbohydrates to give us energy and to help our bodies function properly. As long as we’re eating the right kind of carbs (and staying fairly active, then all is right in the world. So, say it with me: thou shall not fear the pizza.
I have to admit, I’m not always a fan of sun-dried tomatoes because of the texture. They can be chewy almost like beef jerky which weirds me out a little. But I absolutely love the flavor. The solution to that problem? Sun-dried tomato pesto. Just a few ingredients and a food processor is all you need to whip it up. That way you get all the flavour without any chewiness.
The result is crispy, thin-crust perfection! And you get to put on exactly as many toppings as you want! So it’s satisfaction guaranteed! If you cook it a bit too long, the result is a slightly chewy texture, so if it’s chewy, it’s actually overcooked and not undercooked. It will still be edible and tasty though but if this happens then you’ll know you left it in just a smidge too long. It’s simple and oh so good. Honestly I haven’t found a place to get pizza that tastes as good as this homemade variety.
I absolutely love how the freshness of the tomatoes, basil, and garlic pop off the savoriness of the tofu cheese and the sun-dried tomato pesto. It just goes so well on everything.
And by adding sun-dried tomatoes to the traditional pesto recipe, the flavour takes on a whole new life.
Add to that the fact that this pizza comes together in less than an hour, and you’ve got yourself the makings of an approachable, flavour-packed weeknight meal.
