Wholegrain Buckwheat Waffles

Are you a waffle or a pancake person? I recently rediscovered my love for waffles after digging out my waffle maker from my storage unit a few weeks ago. It reminded me what I have been missing out on all of these months without my handy waffle maker. You all know that I have high standards when it comes to waffles. They must be: a) crisp on the outside, b) fluffy on the inside, and c) light but made with whole grains so they stick with me for longer than a couple of hours. These 100 percent vegan buckwheat waffles cook up crispy on the outside, with an almost cake like center, and they meet all of those qualifications and then some. So what else? They possess buckwheat’s rich, nutty flavour, which makes them more unique. Plus, since they’re made with buckwheat flour, I can share them with my gluten-free friends.



Buckwheat, which is the main ingredient in these waffles, is super healthy. Did you know that buckwheat is actually not a nut? It actually a seed, a gluten-free whole grain. The flavour is sort of like almonds. And it is super nutritious: 1/4 cup of buckwheat flour contains 4 grams each protein and fibre.



I occasionally order waffles when I go for brunch, but my all time favourite time of day to eat a waffle is for dessert! A huge scoop of ice cream over a fresh warm waffle, drizzled with peanut butter – yes please!! They are delish by themselves or with toppings, or even as a waffle ice cream sandwich. Seriously, you can go as wild as you want.
