Blue Pea Sushi Rice

Sushi without fish? Absolutely no problem! If you are a sushi fan, you will love this easy vegan sushi recipe. I added smoked tofu, avocado, carrots, lettuce, purple cabbage and cucumber. Boy, were they yummy! Homemade sushi can be so easy!



I had some dried blue pea flower on hand and decided to add them into my sushi rice because your girl here likes all things colourful! Did you know that blue pea flower is native to tropical equatorial Asia (Indonesia and Malaysia)? In southeast Asia, the flower is used as a natural food colouring. These flowers are found near the tropical equator and are commonly brewed in herbal tea.
