Chinese Clay Pot Rice

Have you cooked rice in a clay pot? Cooking rice in a clay pot tastes richer, much more fragrant, and the texture is different from rice cooked in a rice cooker. This vegan Chinese clay pot rice aka bo zai fan is a classic Cantonese dish and the best thing about this recipe is the layer of crunchy, crispy rice that forms around the sides of the bowl.



Usually, Chinese clay pot rice is topped with chicken, pork, lap cheong (Chinese sausage), seafood, vegetables, and more. But topping with tofu & mushrooms are surprisingly delicious if you prepare it right!



This chinese clay pot rice is actually somewhat similar to a Korean bibimbap, in that you get those slightly crispy bits of rice at the bottom of the pot. You basically steam it with a bunch of Chinese charcuterie, whip up a quick sauce, and stir it all together with fresh green onion. Also, the special brown sauce drizzle all over the clay pot rice enhances the flavour 100 times!
