Green Rice Salad w/ Grilled Peaches and Sweet Corn

I love summer when I can easily pop out to the grill and cook fresh food. No fuss, no muss, no clean up. I love summer salads, but sometimes need a little more substance to leave me satisfied. Did you know you can grill peaches? If you haven’t tried grilled stone fruit, you’ve missed out. Grilling fruit intensifies it’s sweetness and gives it some nice charred flavour.



With summer produce in abundance, the price is just right for picking and I couldn’t wait to do something with peaches this year. This is their first appearance here and I couldn’t be happier than to bring them in grilled. Once grilled, they become sweet and smoky with a caramelised flavour. It is a perfect accompaniment to the corn & salad. Who knew all the flavours in this salad would pair so well!



This green rice salad with grilled peaches and sweet corn recipe is an unexpected blend of grilled fruits and raw corn and offers the best of both worlds: light, crisp and refreshing flavour but hearty enough to keep me full. At this moment I’m a happy gal having almost polished off this delicious bowl of goodness you see before your eyes. It is quite a combination of flavours and I must say they all came together, creating a most wonderful and satisfying meal!



Sure the grilled peach and corn are a hit but what brings it all together is a salad that can bridge the gap. An unusual summer salad like this can be the centrepiece of a great grilled meal. It is simple to make, bright and full of flavour and screams summer from the corn to the peaches. Also, it tastes great even after a night in the fridge, which scores big-time salad points in my mind because good salads that keep are hard to come by.
