Japchae

Have you tried Japchae (korean sweet potato noodles stir fried with vegetables and meat)? This vegan Japchae recipe will show you how easy it is to cook up this beloved Korean noodle dish at home where each bite is packed with healthy vegetables and plant protein for a delicious gluten-free meal. If you don't know, Japchae is sweet potato noodles (dangmyeon) usually stir fried with vegetables and meat. It’s one of Korea’s best-loved dishes and it is served at Korean parties and specially occasions.

The noodles are unique because they aren’t your typical flour or rice-based dough. A special ingredient creates luxurious, see-through noodles with a chewy texture that is quite addictive. The sweet potato starch-based noodles do an excellent job absorbing all of the savory sauce. The sticky strands aren’t “saucy” on the outside like normal pasta dishes. Instead, all of the bold flavors are trapped inside each noodle and delivered straight to your taste buds. A savoury-sweet soy sauce gets infused into each noodle, plus an abundant amount of vegetables and tofu are added for a complete meal.

Well made Japchae should have a balanced sweet and savoury flavour, crunchy vegetable texture and bouncy noodle texture. By cooking the veggies separately, you can enhance their individual flavour, texture and colour better because they all have a different cooking point. I hope you enjoy this vegan Japchae version!
