Kale Pesto Pasta

I’ve shared a few pesto recipes on the blog and I couldn’t choose only one, I’m in love with all of them. I’ve always made pesto using raw leafy greens, especially basil or spinach, but kale is in season, so I decided to give it a try and omg, this vegan kale pesto is out of this world. Who doesn’t love pesto? It goes well with pretty much everything and I could eat it with a spoon straight from the jar. This vegan kale pesto pasta will definitely be on rotation this summer. I try to eat a little bit lighter in January to balance out the 1000’s of vegan christmas cookies I just ate. Kale has like every vitamin and mineral you need, and I absolutely need all of them right now!



There is no denying the deliciousness of classic pesto. But I take my pesto in a different direction these days, for a couple of reasons… the obvious one being cheese and the second one being the high quantity of oil in most pesto recipes. That doesn’t sit well with my stomach, so I came up with my own vegan spins on pesto with more balanced amounts of fat and added nutrition from vegetables. Yes, it is packed with so-called super foods, but it is also mighty tasty and is my absolute favourite when I need something quick, warm and comforting – it is the dream ten minute meal and I make it at least once a week.



This is the best vegan kale pesto – it is lemony, garlicky, and completely delicious! I love pesto. Not only is it super delicious, but it’s customisable, versatile, and nutritious. If I’m feeling like I’m not getting enough greens, I’ll make a pesto to put on whole wheat or chickpea noodles. I also love adding pesto to mashed avocado (with a dash of hot paprika) to make a deliciously flavourful avocado toast. I make it a couple times a month, and it is usually gone within a day or two! The recipe is well-balanced, with the savoury and herby element of garlic, nuttiness from the pine nuts, and earthiness from the kale. Plus, it only takes a few minutes to throw together! I love it when you can achieve big flavours with minimal effort.



Real talk: all things considered, kale is bitter and earthy. Some people (me) enjoy this, some people don’t. If you’re on the fence, though, you’ll probably like the kale in this kale pesto; it’s tempered with complementary sweet, acidic and nutty flavours from the garlic, olive oil, lemon, and pine nuts – and of course, a little bit of basil to bring it all home.
