Oodles and oodles of delicious noodles! I’ve been on a huge soba noodle kick lately. Have you tried soba noodles before? They’re made with buckwheat which gives them super credit bonus points. They are way heartier than your standard Asian rice noodle and have a firmer texture. Great for a veggie heavy stir fry.
Because piles of tangled noodles and stir fried swiss chard in an ‘instant’ sauce are awesome…… even if I can’t arrange noodles prettily to save my life so please excuse my pictures. Despite being a tangled mess, today’s vegan maple soba noodle stir fry is a simple mid-week recipe, which came about due to a serious bout of laziness on my part. I could not be bothered to go shopping and had ransack my cupboards in search of food stuffs I could throw together for a quick dinner. This is definitely that kind of dish that seeming as if you’ve spent hours and hours slaving over it, but in reality, once you’ve chopped up your vegetables and combine the sauce, it comes together in what feels like moments.
This maple soy soba noodle stir-fry makes the perfect one pan meal for a busy night! Whenever I don’t have time a lot of time to cook, I always turn to stir fries. They’re easy to make, fast, and you can basically throw whatever ingredients you have in them!
This stir-fry uses soba noodles, which are made of buckwheat, (which is actually gluten-free!) but you can feel free to use whatever asian noodles you have handy. I also love this dish with rice noodles! I love adding edemame beans and tofu into my stir fries because they are a great vegetarian source of protein. This dish also stores great in the fridge for a few days, and makes a great packed lunch on the go!
Another great thing about creating vegan soba noodle recipes is that they are easy to scale up or down to serve one or more people – simply adjust ingredient portions to suit. Now this recipe serves 3, or 2 hungry people who love a good soba noodle stir fry. I could have finished this whole portion by myself if only I didn’t have to share with others. This soba noodle stir fry is a perfect healthy vegan recipe that is filled with veggies and ready in under 30 minutes. A super simple Asian stir fry for a weeknight meal.
Don’t you think sesame seeds are awesome? They’re crunchy (that’s always a good thing); tasty (even more so when toasted); healthy (excellent source of calcium); suited for all types of dishes (sweet and savoury); sesame oil is the ultimate asian flavour (in my humble opinion); and don’t get me started on tahini (i.e., I put it in everything).
There, did i sell this to you yet? If not, then maybe raving on about the soba noodles will do it for you. Don’t worry, I won’t rave on too much, but I will say that these beige spaghetti-like noodles are made from healthy buckwheat flour and have a beautiful nutty ‘bite’ to them that I really like. Apparently, too, they contain antioxidants and all 8 essential amino acids and are easy to digest. Oh, and they’re often gluten free, too! So … eat more soba noodles!
