Pulled Jackfruit Summer Rolls w/ Peanut Sauce

Hi friends! How is summer already half way over!! Time flies for sure. I don’t know about you, but when it’s hot out, I want to just sit outside, and minimally use my oven or stove. My room is like a sauna…the problems of not having an air conditioner in your accommodation and really Brisbane doesn’t get that hot often enough to warrant it but those random weeks it does…man, it makes me want to just run out of my house and live at the ice-cold malls for a few weeks…know what I’m saying!!



We have all heard of jackfruit by now, right? The vegan’s dream meat substitute. pork-like, but not porky. Made from a fruit. Easy to find. The perfect stringy, but not too weird, texture. Neutral enough in flavour to be used with any sauce. It is cooked in a hoisin-based sauce, and baked until it’s ooey gooey and it has a taste similar to that of caramelised pork. But it is a plant. amazing, right? So today we’re taking jackfruit, infusing it a 5 minute peanut sauce, baking them until golden brown, layering it with crunchy vegetables, and wrapping it in soft rice paper to make the perfect sweet, savoury, crunchy, and uber fresh, hand-held bite.



So I’m a huge fan of spring and summer rolls and make them weekly. I love them mainly because they are refreshing, pretty, easy to make and I can use up all my random leftover veggies. But sometimes I love to make them a bit more satiating. So far tofu and tempeh were my best friends in this mission but recently I discovered that combining my standard pulled jackfruit recipe with spring/summer rolls opens a whole new world to my tastebuds. Also, this pulled pork jackfruit is delish in so many other dishes! Use it for burgers, pizza, or wraps, or just serve it as it is with rice, potato or salad. So good!


As far as I can tell, the magic of these pulled jackfruit summer rolls with peanut sauce comes in two places. The 5 minute peanut sauce to dip these suckers in is the bomb af! Five minutes to sweet, spicy, salty, savoury perfection that adds layers of flavour to our rolls. Uber fresh & crunchy vegetables and herbs. The fresher the better, here. They add the crunch factor and the mint and cilantro take the flavours over the top! I know what you’re thinking and yes, the experience of eating one of these summer rolls dipped in that sauce is nothing short of magical. I mean, they’re not waffles, but still - they are pretty amazing.



Here we are again, going to blow my own trumpet, but I can’t help, these pulled jackfruit summer rolls are seriously genius. The jackfruit is extra meaty, sweet and savoury and packed with all the flavours you’ve ever dreamed about. The summer rolls are fresh, light, crunchy and simply irresistible. You know I suck at describing food so you just have to trust in me with this once again, these rolls are going to be your new favourites!
