Of all the fried rice dishes I’ve ever eaten in my life, I’d say that Thai pineapple fried rice is probably my overall favourite. This better-than-takeout Thai-style pineapple fried rice is the perfect savoury/sweet recipe to satisfy your cravings.



The charm isn’t simply the savoury and sweet combination, but also the use of fragrant curry powder. Add juicy, sweet pineapple chunks in addition to bright green peas, and crunchy, nutty cashews. This is an unusual marriage of flavours that simply works.



You can have this dish ready in minutes because your rice is cooked the day before and the rest of the ingredients are quickly stir-fried. No need to order pineapple fried rice from takeout when you can make it faster than it can get there. This recipe is so fast and easy to make, you can have it every night if you want to. With a perfect balance of sweet and savoury, you will taste the mouthwatering flavors of Southeast Asia in this dish.
