Carrots are stealing the show this week. This recipe features the same flavours as morning glory muffins—shredded carrots, raisins, orange zest, coconut and walnuts—in oatmeal form. Which would you rather eat for breakfast: vegetables or dessert? Luckily, I have found a way to get the best of both worlds with this vegan carrot cake overnight chia oats. Not only is it delicious enough to convince anyone to eat veggies for breakfast, but it is lightning fast. I’m talking 5 minutes from start to finish!
Healthy eating staples like carrots and oatmeal are taken to a whole new level in this delicious breakfast. think plump juicy raisins, crunchy walnuts, flaked coconut, and dried mulberries – all naturally sweetened with soft caramel-y dates and real maple syrup. Oh! and don’t forget to top that off with a healthy dollop of peanut butter. Mmmmm… Each bowl of this delicious, healthy oatmeal contains one entire grated carrot. That is almost 1 full serving of vegetables in something that tastes like dessert! Packed with fibre, protein, healthy fat, and vitamins A and C from the carrots, the easter bunny would be all over this breakfast.
