Minestrone with Macaroni

Finally! It’s about time this blog offered a traditional minestrone soup recipe. Minestrone is a hearty Italian vegetable soup made with tomato-y broth and pasta or rice. I’ve been working hard on this recipe and I’m so excited to share it with you.


This soup is amazing, friends! One sample bite in and I believe I started talking to myself about how delicious it was, which was really confusing for everyone in the room. In other words, this is talk-to-yourself-it’s-so-good soup.


Hearty vegetable soups like minestrone is one of my favourite recipe to use up whatever vegetables I have lurking in the back of the fridge.



It’s a really versatile soup, and you can use whatever ingredients you have on hand each time you make it. For example, you could add zucchini or cabbage. Or leave out the green beans.

Or you could use red kidney beans instead of cannellini beans. And maybe you prefer penne pasta to macaroni noodles. There are no rules when it comes to minestrone soup.


Imagine this, a cold rainy night, a big bowl of Italian Minestrone Soup, and a slice of crusty Italian bread. Served in big soup bowls with a generous sprinkling of freshly grated vegan parmesan cheese and lunch is served. Nothing better than that.
