Rainbow Roasted Veggie Tacos

I used to never like veggies, honestly. Believe it or not, I would even pick out the tiniest leafy green out from my bowl of noodle. But now, I can't go a day without having my greens.


These roasted summer vegetables are so flavourful and smoky. They were first brushed with olive oil, seasoned generously with spices and roasted until tender and charred, before being wrapped inside warm corn tortillas and topped with vibrant homemade mayonnaise & mustard, yum!



These tacos are packed full of cumin-spiced roasted vegetables. That’s it. Call them good. No grains, no beans, just summer vegetable goodness. While there was a long ingredient list, I wasn’t intimidated. I just used all the vegetables I had in my kitchen at the time. I was craving hearty ones, thus a mixture of summer produce was used.


So fresh, simple, crunchy and simply perfect for an easy chill-lax kind of night 😎 oh, and let us not forget the avocado (the quintessential component to any excellent taco, am I right?)!


I love the sweet and savoury combinations of the roasted vegetables, the creamy mayonnaise and the tang of the awesome mustard.
