Baklava Pistachio Cinnamon Rolls with 'Honey' Glaze

Holiday season is all about spending time with your family but at the same time it’s also about good food. I really believe that you should not spend too much time in the kitchen and rather enjoy the holidays with your loved ones. And so this recipe is all about that – it’s easy, delicious and something that your whole family can enjoy without you spending hours in the kitchen!


I like to go for recipes that are quick, simple and leave lots of room for error! So, as you can imagine, I haven’t exactly been leaping with joy at the prospect of baking with yeast, which necessitates extra time and can go very wrong if you don’t get the initial steps right.


Cinnamon rolls look fancy, difficult to make and potentially time consuming but I promise they’re easier to make then they look and when you pull it off you will feel like a pro baker.


Seriously bursting with flavour, you’d never guess these vegan baklava pistachio cinnamon rolls are made with no eggs or butter. A perfect 'honey' glaze topped with crushed pistachios.



If you don't already know, baklava is a traditional dessert consisting of flaky dough, pistachios (or other nuts) & honey. I wanted to do a big twist on the classic baklava and combine it with a cinnamon roll because who doesn’t love a warm, cinnamon, sweet & soft cinnamon rolls?


Okay, so I know yeast rolls can seem like a lot of work, but it just takes a couple times to make them and you’ll feel like a pro in no time. Then all that’s left is to bake and top with the 'honey' glaze and crushed pistachios!


The resulting ‘honey’ glaze was quite thin, almost like a syrup, so when I poured it on top of the buns, they absorbed it right up, giving a sweetness that isn’t cloying.


If you are not a pistachio fan, feel free to add nuts of your choice or you can skip nuts altogether and simply make salted caramel sticky buns. Hope you guys enjoy these sticky buns with your family!
